Mediterranean Chicken Recipe

Chicken breasts are cooked in a sauce made with tomatoes, olives, white wine, garlic, and herbs in this Mediterranean chicken recipe.

  • 2 tablespoons white wine
  • 2 teaspoons olive oil
  • 6 skinless, boneless chicken breast halves
  • 3 cloves garlic, minced
  • ½ cup diced onion
  • 3 cups tomatoes, chopped
  • ½ cup white wine
  • 2 teaspoons chopped fresh thyme
  • 1 tablespoon chopped fresh basil
  • ½ cup kalamata olives
  • ¼ cup chopped fresh parsley
  • salt and pepper to taste

  • 1.In a big skillet, heat the oil and white wine over medium heat. Add the chicken and cook for 4 to 6 minutes on each side, or until browned. Take out and set aside the chicken from the skillet.

    2.Sauté garlic for 30 seconds after adding it to pan drippings. Add the onion and cook, stirring, for 3 minutes or until the onion is soft. After adding the tomatoes, boil. Lower the temperature to a simmer for ten minutes after adding 1/2 cup of white wine. Simmer for a further five minutes after adding the basil and thyme.

    3.Put the chicken back in the skillet, cover it, and cook it on low heat until the insides are no longer pink. Add the parsley and olives, and simmer for one minute. After adding salt and pepper, serve.
