  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 4 (4 ounce) salmon steaks
  • 1 teaspoon minced garlic
  • 1 tablespoon lemon pepper
  • 1 teaspoon salt
  • ¼ cup water
  • 1 cup chopped fresh tomatoes
  • 1 cup chopped fresh cilantro
  • 2 cups boiling water
  • 1 cup uncooked couscous

1.In a big skillet, preheat the butter and olive oil over medium heat. Salmon should be added to the skillet along with salt, pepper, and garlic. Cover the fish with 1/4 cup of water. Add the cilantro and tomatoes to the skillet. After the fish can be readily flaked with a fork, cook it for 15 minutes while covered.

2.In a pot, bring two cups of water to a boil. Take off the heat and stir in the couscous. After covering, wait five minutes. Drizzle the pan sauce over the seared fish as it is served over couscous.
