Garlic Chicken Stir Fry Recipe

A stir-fry recipe I created to appease a family that adores garlic.

Garlic Chicken Stir Fry Recipe

  • 2 tablespoons peanut oil
  • 6 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 bunch green onions, chopped
  • 1 teaspoon salt
  • 1 pound boneless skinless chicken breasts, cut into strips
  • 2 onions, thinly sliced
  • 1 cup sliced cabbage
  • 1 red bell pepper, thinly sliced
  • 2 cups sugar snap peas
  • 1 cup chicken broth
  • 2 tablespoons soy sauce
  • 2 tablespoons white sugar
  • 2 tablespoons cornstarch

1.In a large skillet or wok, heat the peanut oil. Add the ginger root, green onions, two minced garlic cloves, and salt as soon as the oil starts to smoke. Stir-fry for about two minutes, or until onion turns transparent. Stir the chicken for three minutes or until it becomes opaque. Stir in the final four minced garlic cloves. Add 1/2 cup of the broth/water, the bell pepper, the cabbage, the sweet onions, and the peas. Cover.

2.Combine the remaining 1/2 cup of broth/water, sugar, cornstarch, and soy sauce in a small bowl. When the sauce has thickened, add it to the wok or skillet and stir until the chicken and vegetables are covered. Serve right away with hot rice if preferred.
