Cheese Bourekas Recipe

Cheese is enclosed in puff pastry pockets called bourekas. They are delicious served as an appetizer or, in the classic Israeli fashion, for breakfast with lettuce, cheese, olives, and plain yogurt. They could also be stuffed with spinach and feta or any leftover mashed potatoes.

Two huge eggs, separated

Two cups of mozzarella cheese, shredded

One tsp of dehydrated parsley

One pinch of powdered garlic

One pinch of powdered onion

One pinch of salt

One dash of black pepper

One package (17.5 ounces) of frozen puff pastry

1.Turn the oven on to 350 degrees Fahrenheit (175 degrees Celsius). Coat a baking sheet in oil.

2.In a medium-sized bowl, beat one egg and stir in cheese. Add parsley, salt, pepper, onion powder, and garlic powder for seasoning. Put aside.

3.Using a lightly floured board, cut each puff pastry sheet into six equal squares, making a total of twelve squares.

4.In a separate bowl, beat the remaining egg with water. Lightly brush each pastry square’s edges with egg wash. Add a generous tablespoon of cheese blend in the middle of every square. Using a fork, seal the edges of the folded pastry over the filling. Spoon remaining egg wash over top, transfer to the prepared baking sheet, and top with sesame seeds.

5.Bake for about 30 minutes, or until golden brown, in a preheated oven.
