One of My Favorite Fall Traditions

I have been a resident in Utah for the past six years, and one of my favorite fall rituals is going to Rowley’s Big Red Barn in Santaquin. It takes roughly forty-five minutes to drive from our place, but every minute spent on the road is well worth it! In order to do all of the activities first, we immediately board the wagon ride and head out to the field as soon as we arrive. The corn mazes, slides, zip line, and apple throw are all favorites among the children.

Following a number of hours spent playing in the field, we make our way back to the Red Barn for some apple cider donuts, ice cream, and apples that have been frozen. There is always one of everything that we acquire! (Okay, more than one donut, because those are difficult to divide up among individuals. (Ha!)

When we go to Rowley’s, I always tell myself that I’m going to bake an Apple Cider Donut Cake based on their donuts. This happens every year after we go there. The fact of the matter is, however, that life gets in the way, and other types of cake take precedence.

Apple Cider Donut Bundt Cake

While making this cake, I used the pumpkin cake recipe that I had previously used for my pumpkin pie cake. A total of two cups of pumpkin puree is utilized in the layers of my pumpkin cake. Considering that we are not going to be utilizing pumpkin, we are going to substitute it with one cup of apple cider and one cup of applesauce for this cake, in addition to oil. This cake would not be nearly as moist without all of these liquids! For an additional layer of flavor, I have also included some cinnamon and nutmeg in the mixture. Cinnamon Sugar Coating

Following the completion of the baking and cooling process for the bundt cake, you will use a pastry brush to apply butter on the cake, followed by a dusting of cinnamon and sugar. On the other hand, you might use standard granulated sugar instead of the coarse sugar that I used. (or some powdered sugar for a cake that has a more “wintery” appearance!)

INGREDIENTS

FOR THE CAKE

  • 3 cups (360 g) all-purpose flour
  • 2 tsp (5 g) ground cinnamon
  • 1/4 tsp (1 g) nutmeg
  • 1 tsp (5.6 g) salt
  • 1 1/2 tbsp (21 g) baking powder
  • 1 1/2 cups (300 g) granulated sugar
  • 1/2 cup (110 g) brown sugar
  • 1 cup (224 g) vegetable oil
  • 3 eggs, at room temperature
  • 1 cup (250 g) unsweetened applesauce, at room temperature
  • 1 cup (248 g) apple cider juice (not vinegar), at room temperature
  • 1 tsp (5.6 g) vanilla extract

FOR THE CINNAMON SUGAR COATING

  • 1/4 cup (56 g) unsalted butter melted
  • 1/4 cup (50 g) granulated sugar
  • 2 tsp (5 g) cinnamon

INSTRUCTIONS

  • Prepare your oven by preheating it to 325 degrees Fahrenheit. After spraying a bundt pan with non-stick spray, dust it with flour to prevent sticking. Put aside for later.
  • The flour, cinnamon, nutmeg, salt, and baking powder should be mixed together in a bowl of medium size. Use a whisk to mix the ingredients. Put aside for later.
  • Put the sugar, brown sugar, and oil into a big bowl and mix them together. In order to blend, mix at a medium speed.
  • After adding the eggs to the sugar mixture, continue to mix it for approximately two minutes at a medium speed.
  • Mix in the vanilla extract and applesauce. In order to blend, mix.
  • While the mixer is operating at a low speed, add half of the flour mixture, and then proceed to add half of the apple cider liquid. Keep switching between the flour combination and the apple cider until you reach the point when you are finished with the flour mixture. Mix until there are no traces of flour left behind. Instead of being thick, the batter will be slightly thinner.
  • After pouring the mixture into the bundt pan, prepare it for baking for half an hour. A toothpick that has been pushed into the middle of the cake should come out with a few moist crumbs on it to indicate that the cake is ready to be served.
  • It is recommended that you wait one hour for the cake to cool in the bundt pan before turning it over onto a cake plate or a cooling rack.
  • Apply butter to the cake using a pastry brush and spread it evenly.
  • Take the ¼ cup of sugar and two teaspoons of cinnamon and mix them together. After that, sprinkle the mixture onto the top and sides of the cake. It is recommended that you fill your palm with the mixture and then pat it on the cake in order to effectively coat the sides.
